6.39. Fumage de Saumon réalisée par les élèves de 1e Bac pro Aqua à l’ENILIA de Surgères dans le cadre du M.A.P. “Transformation de produits d’aquaculture”, produit prochainement en vente sur le Lycée !

• Vidéo présentant le process de fumage de saumon (2e partie : à partir de la sortie du fumoir) réalisé par les élèves de 1e Bac pro Aqua le mardi 6 Mai 2014.

Sortie des filets de saumon du fumoir (“basse température”, “fumé au bois de hêtre”), avec explication de M. Frederic Challat, de l’ENILIA …

…Tranchage des filets fumés…

…récupération de la chair fumée sur les parties basses , en vue de la réalisation ultérieure de “terrines de poissons”,…

… le groupe des 1ere Bac pro Aqua en tenue “bonnes pratiques d’hygiène”, requise dans un atelier de transformation de produits alimentaires…

 …et le produit fini “pavé de saumon fumé“, (Poids d’environ 500 g. pièce) qui sera prochainement en vente au Lycée de la Mer.
